An out of work mother of three in Quito,Ecuador took a free course for entrepreneurs where the challenge was to do something different. In six months time she had developed a line of unusual ice cream flavors including guinea pig,beetle and mushroom. She is located in a square and sells 150 guinea pig cones at $1 each per week and prepares 40 beetle cones and a smaller amount of mushroom. Guinea pigs are a common meal in Ecuador and are said to taste like chicken. She makes a kind of pate out of the meat then adds cream and serves with peanuts sprinkled on top. Her flavors seem to be catching on even though some folks are doubtful until they have a taste.
