Eat the Whole Thing

A London woman who hosts a supper club is encouraging people to eat their Christmas trees instead of kicking them to the curb. She claims the needles can be used like rosemary or bay leaves to add flavor to dishes or blended into vinegar or crushed in gin. They can also be used in pickling eggs or in drinks and infusions never mind tea. The tree can be cut into sections and roasted in a hot oven to make pine ashes which are also used for seasoning. If you have a live tree you can eat the buds in the spring though she cautions people to use gloves if their tree is a spruce. Here I thought letting the Boy Scouts put them in streams to give young salmon hiding/resting spots was a clever/organic use for old Christmas trees.
