Easy as Pie?

I have no idea what turned my thoughts to idioms but maybe it will become apparent as I go on about it. Many of these phrases make sense but I would say that an equal amount of them don't. My example  "easy as pie" is supposed to mean simple,but anyone who has ever made pies knows that they aren't that easy to make.
From what I found out about this particular phrase is the easy part is in the eating of the pie,which makes me wonder why not just say "as easy as eating pie"?
Mark Twain frequently used the just word pie to mean something pleasant,which is along the same way I was thinking with adding the word eating to the phrase. So with those thoughts for you...Isn't that just pie?
